Quick Grilled Pound Cake Dessert


1 bag of frozen berries (the one I used was Walmart's Great Value Berry Medley:: Strawberries, Blackberries, Blackberries, & Red Raspberries) *Thawed*
 Vanilla Loaf Cake or Pound Cake
 Powdered Sugar Foreman Grill or a frying pan


Directions
  In a hot grill or pan grill/toast the cake 
Spoon thawed berries and some of the juice on the cake 
shake powdered sugar over top of the cake

 ENJOY!!
 

Easy Vanilla and other Flavors Icing

1/2 cup butter, softened
4-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
5 to 6 tablespoons 2% milk

Directions
In a large bowl, cream butter until light and fluffy. 
Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency. 

Yield: About 3 cups.

for Easy Almond Frosting: 
Prepare as directed above, 
use 1/2 to 3/4 teaspoon almond extract instead of the vanilla. 
Yield: about 3 cups.

Easy Chocolate Frosting: 
Prepare as directed above, 
except use 4 cups confectioners' sugar, 
1/2 cup baking cocoa and
 6-7 tablespoons milk. 
Yield: about 3 cups.

Easy Lemon Frosting: 
Prepare as directed above, 
except use 5-6 tablespoons lemon juice instead of the milk 
and 1 teaspoon grated peel. 
Yield: about 3 cups.

Easy Orange Frosting: 
Prepare as directed above, 
except use 5-6 tablespoons orange juice instead of the milk 
and add 1 teaspoon grated orange peel. 
Yield: about 3 cups.

Easy Peanut Butter Frosting: 
Prepare as directed above, 
except use 1/2 cup peanut butter instead of the butter 
and use 6-8 tablespoons milk. 
Yield: about 3 cups.

Easy Peppermint Frosting: 
Prepare as directed above, 
except use 1/2 to 3/4 teaspoon peppermint extract instead of the vanilla. 
Yield: about 3 cups.

Cream Cheese Icing

1 cup powdered sugar
1 8oz packaged cream cheese
2 tablespoons margarine
1/2 teaspoon vanilla

Mix all of the ingredients listed
Beat mixture and spread onto cooled cake. 

Cookie Dough Frozen Yogurt

Eggless Cookie Dough (link is below)
3 cups of Vanilla Yogurt
an air tight freezable bowl

After you have the cookie dough made stir in the yogurt until smooth.
once it is mixed really good close the lid and pop it in the freezer until frozen and enjoy!!


Eggless Cookie Dough

Eggless Cookie Dough


1 1/2 cups Unsalted Butter, Softened (1/2 cup)
1 1/2 cups Packed Dark Brown Sugar (1/2 cup)
3/4 cup Granulated Sugar (1/4 cup)
2 tablespoons Vanilla Extract (2 teaspoons)
3 cups All-purpose Flour (1 cup)
3/4 teaspoon Baking Soda (1/4 teaspoons)
3/4 teaspoon Salt (1/4 teaspoons)
2 1/4 cups Chocolate Chips (3/4 cup)

In a mixing bowl of a stand mixer, beat the butter and both sugars together until light and fluffy. Add vanilla and beat until combined.

In a small mixing bowl, whisk together the flour, soda and salt. Add the chocolate chips or chunks and stir.

Add the flour and chocolate mixture to butter mixture and fold in gently.

Place in a container and cover with lid. Freeze until set, preferably overnight.

Banana Pudding

4-5 bananas, sliced (use a little lemon juice to prevent browning)
1 box vanilla wafer
1 box Jello Instant Vanilla Pudding Mix
8 ounces cream cheese (1/3 less fat)
1 can Eagle Brand Condensed Milk (low fat)
1 large Cool Whip (lite)

1. Mix cream cheese with mixer until soft and smooth.
2. Add condensed milk then add vanilla pudding mix that
has been prepared as directed on the box.
3. Layer: Vanilla Wafers, bananas, pudding mix- Repeat
layers , end with pudding mix.
4. Let it set in the refrigerator until chilled.
5. Top with Cool Whip.
6. Use large oblong dish.

Rolled Buttercream Fondant

1 cup light corn syrup
1 cup shortening
1/2 teaspoon salt
1 teaspoon clear vanilla extract
2 pounds confectioners' sugar


1. In a large bowl, stir together the shortening
and corn syrup.
Mix in the salt and vanilla flavoring,
then gradually mix in the confectioners' sugar
until it is a stiff dough.
If you are using a stand mixer, use the
dough hook attachment. Otherwise,
knead by hand. If the dough is sticky, knead in
more confectioners' sugar until it is smooth.
Store in an airtight container at room temperature
or in the refrigerator.

2. To use, roll out on a clean surface that has been
dusted with confectioners' sugar until it is 1/8 inch
thick or thinner if you can. Drape over frosted and
chilled cakes and smooth the sides down, or cut
into strips to make bows and other decorations.

Do-Nuggets

Do-Nuggets
1 package store-bought biscuits
Vegetable oil, for frying
2 tablespoons ground cinnamon
2 tablespoons ground nutmeg
2 tablespoons ground ginger
2 tablespoons powdered sugar

Sugar glaze:

1 cup powdered sugar
1/2 cup milk

Preheat oil to 360 degrees F.
Divide each biscuit into 4 pieces
and roll each piece into a ball.

Add to hot oil and fry until golden brown.

Remove the nuggets to a paper towel lined
plate to soak up some of the oil.

In a large paper bag combine the cinnamon,
nutmeg, ginger, and powdered sugar.

Add the nuggets to the bag and shake to coat.

Place the warm nuggets onto a platter.

In a small bowl add the powdered sugar and
slowly pour in the milk until the glaze is smooth
and at the desired consistency.

Drizzle the glaze over the nuggets and serve.

Oreo Balls

1 package(S) Oreo's, "Crushed"
8 ounce(S) Cream Cheese, "soft"
1 package(S) Almond Bark
1 package(S) Choc. almond Bark


Mix Oreo and cream cheese roll into walnut size balls
chill for an hour
stick toothpick into balls
dip into choc allow to harden on wax paper
Drizzle with white chocolate
freeze and then cool till ready to serve

Pretzel Candy

1 bag of mini twist or square pretzels
1 bag of Hershey's Kiss or Hugs
1 or 2 King size bags of M&M's

Oven at 170 degrees
Cookie sheet with parchment paper on it
Lay out the pretzels on cookie sheet
Put a Hershey kiss on each pretzel (unwrap it first)
Bake in oven for about 5-6 minutes.
Chocolate kisses need to be about a minute longer.
White chocolate melts faster.
After taking them out of oven, push a m&m on top of each kiss
Let cool and then eat away.
They are really good cold.

Chocolate Chip Cheese Ball

1 pkg. 8oz. cream cheese
1/2 cup butter
1/4 tsp. vanilla
2 Tbs. brown sugar
3/4 cup confectioners sugar
3/4 cup mini chocolate chips
3/4 cup finely chopped pecans
Graham crackers


Beat softened cream cheese, butter, & vanilla
until creamy. Slowly add sugars until blended.

Stir in chocolate chips. Place mixture onto
a piece of plastic wrap and form into a ball.

Refrigerate for 1 hour.

Roll ball in pecans. Serve with graham crackers.

"Cookie" Brownie

This one is really really easy!!! (my fav dessert)

1 box of Brownie Batter (I use 8x8)
1 pack of chocolate chip cookie mix or the pre-made cookie dough (or any chocolate chip cookie dough you would like


Pre heat the oven to 450

Make the Brownies the way it says on the pack/box

If you have the cookie mix, make it like it says on the pack

with cooking spray spray the bottom of the 8x8 pan

put all of the brownie batter in the pan

place [drops or slices] of cookie dough in the
brownie batter (making sure you cover the
cookie dough as much as you can)

bake for 45 mins or until done

Pumpkin Roll

For The Cake
1 cup sugar
3 eggs 3/4 cup flour
3/4 cup pumpkin
1 teaspoon baking soda
1/2 teaspoon cinnamon

Grease & flour a cookie sheet that has sides.

Pour into pan (mixture is thin) and sprinkle
top with 1/2 to 1 cup chopped pecans.

Bake 20 mins at 350 degrees.

Let cool in pan 15 mins., then turn out onto
aluminum foil that has been
heavily sprinkled with powdered sugar.

For The Icing
1 cup powdered sugar
1 8oz packaged cream cheese
2 tablespoons margarine
1/2 teaspoon vanilla

Mix all of the ingredients listed

Beat mixture and spread onto cooled cake.

Then roll and wrap with aluminum foil and
refrigerate at least 4 hours. You can also freeze it.

Chocolate Cake In A Mug

1 coffee mug4 Tbsp. cake flour (plain, not self-rising)
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional


Add dry ingredients to mug, mix well with a fork.

Add egg, mix thoroughly.

Pour in milk and oil and vanilla, mix well.

Add chips, if using.

Put mug in microwave, and cook for three minutes on 1000 watts. (Don't
over cook, watch closely. Not all ovens cook with the same wattage)

Cake will rise over top of mug--do not be alarmed!

Allow to cool a little; tip onto a plate if desired.

Eat!

Buckeye Peanut Butter Candy


2 cups Peanut Butter, smooth (for best results,
don't use natural, organic for this)
2 sticks of Butter, softened
22 oz Powdered Sugar
1 - 12 oz bag semisweet chocolate chips (you make want to 
have another bag on hand just in case - my family tends 
to like them double dipped in chocolate for a thicker chocolate crust)


Mix well all 3 ingredients until evenly incorporated. Line a baking sheet
or tray with waxed paper to place the peanut butter balls.

Make balls the size of walnuts or smaller. If mixture is too wet to
roll into balls, you can add more powdered sugar, though this will make the
balls more dense and not as creamy in texture. I put them on a tray
and in freezer for an hour or so until they are firm and ready to roll.
You can use a melon-baller or a meatballer to make the job of rolling easier.

Place rolled balls on tray and refrigerate overnight or in freezer for
a few hours. This will make them easier for dipping.

Melt chocolate chips in double boiler. Dip the balls in melted chocolate and
place on lined cookie sheet. I use toothpicks to dip the balls in chocolate.
Cover about 3/4 of the ball in chocolate.
YOU WANT SOME OF THE PEANUT BUTTER FILLING TO SHOW.
This makes them look like the buckeye nuts.

Place back in refrigerator or freezer until chocolate sets.

No Bake Cookies

 2 cups sugar
4 tablespoons melted butter
4 tablespoons cocoa
1/2 cup milk
3 cups quick-cooking oats
1/2 cup peanut butter

In a sauce pan over medium high heat add
melted butter, cocoa, sugar and milk bring to a boil.

Boil for 3 minutes. Stir constantly.

Remove from heat and add the oats and the peanut butter.

Mix and drop by spoonfuls on wax paper.

"Throw Together" Candy

1/4 c. (1/2 stick) butter
1 c. graham cracker crumbs
1 c. shredded sweetened coconut
1 pkg. (6 oz.) chocolate chips
1 pkg. (6 oz.) white chocolate chips
1 pkg. (6 oz.) peanut butter chips
1 pkg. (6 oz.) butterscotch chips
1 c. chopped pecans *(optional)
1 can sweetened condensed milk

Preheat oven to 350 degrees.

Melt butter in a 9 x 12 x 2 inch pan.

Sprinkle crumbs evenly over the melted butter and press down.

Sprinkle on the coconut, then the chocolate chips, then the white chocolate
chips, then the peanut butter chips, then the butterscotch pieces.

Pour condensed milk evenly over all.

*Sprinkle on the pecans and press lightly.

Bake for 30 minutes at 350 degrees.

Cool in pan on wire rack.

Cut into 1 x 2 inch bars.

Easy Cheese"y" Cake


1 8oz package of cream cheese (room temperature)
3/4 cup of sugar
1 8 oz tub of cool whip
1 gram cracker crust


Mix the sugar and the cream cheese until blended smooth

fold in cool whip

place in the gram cracker crust

Chill and serve with favorite topping

See... it really is Eazy Cheese"y" :)

No Bake Turtle Cheesecake

Crust
1 1/4 cups chocolate wafer crumbs
2 tablespoons sugar
1/4 cup butter, melted
1/4 cup chopped pecans


Filling
2 (8-oz.) pkg. cream cheese, softened
1 1/2 cups milk
1/4 cup firmly packed dark brown sugar
2 teaspoons vanilla
1 (3.4-oz.) pkg. instant vanilla pudding and pie filling mix
1/4 cup chocolate fudge ice cream topping (not hot fudge)
1/2 cup pecan halves
1/3 cup caramel ice cream topping
Whipped cream, if desired

1. In medium bowl, combine all crust ingredients; mix well.
Press mixture evenly in bottom of ungreased 9-inch springform pan.

2. In medium bowl, beat cream cheese until fluffy.
Gradually beat in milk until mixture is smooth.
Add brown sugar and vanilla; beat until well blended.
Add pudding mix; beat at low speed for 2 minutes.
Pour mixture over crust in pan.

3. Drizzle with fudge topping; swirl into filling with tip of knife.
Arrange pecan halves over top of cheesecake.
Refrigerate at least 3 hours or until firm.

4. To serve, cut cheesecake into wedges; place on individual
dessert plates. Drizzle each serving with caramel
topping. Top each serving with whipped cream.
