Easy Poultry Rolls

In this house we have a lot of different tastes, and we love Asian inspired poultry rolls.  That is one meal (or side dish) that we can all agree on...
For these you will need:
Rice Paper sheets
Bean Sprouts
Matchstix carrots
Sweet Chili Sauce
Chicken (cooked and cubed)
*OPTIONAL*
Plastic canvas circles (like these)



Now onto the making of these awesome things!!

Mix the chicken and sweet chili sauce together
Place the rice paper on a plate or the canvas and soak in water for a few seconds
When the rice paper gets softened place about 4-6 chunks of chicken, some bean sprouts, and some carrots on the wrap.
Wrap and roll like it’s a burrito. Let it sit and dry for a few minutes.

Mexican Rice (easy and yummy)


In our house Mexican food is one of our favorites, BUT, having a picky eater on my hands, **cough, my hubby, cough**, its hard to please everyone... I came across this recipe about a year ago and it's our favorite. ( I wish I remembered where I found it so I can give credit).
This is some of the easiest rice to know how to make and you can use different bouillon for different flavored rice.



For easy Mexican rice:
   About 1/4 cup tomato bouillon
   4 cups of water
   2 cups of standard rice (not instant or boil-a-bag)
**optional ingredients**
if adding any of these make sure they are cooked and add about 1/4-1/2 cup to taste.
   corn
   peas
   carrots


rinse the rice using a mesh-type strainer until the water runs clear.
whisk the water and the bouillon together to get it well mixed.
add rice.
bring rice to a boil
take it off of the heat and let it sit for 20 mins (do not lift the lid for the entire 20 mins)
the rice should be fluffy and moist.

Cream Biscuits

1 3/4 cups Self-Rising flour
1 cup heavy cream

Preheat oven to 450F degrees.  
Spray a baking sheet with a little nonstick cooking spray. (I prefer the baker’s kind with flour in it)
Measure out flour into a large bowl (don’t pack your measuring cup, scoop and swipe off excess flour).
Gradually stir in cream, making it a sticky dough.
Mix gently then turn dough out onto a lightly floured surface (use the self-rising flour).
(If dough is too sticky to handle, add just a sprinkling of self-rising flour to the top.)
Fold the dough two times. 
Press or roll dough gently to about a 1/2 inch thickness.
Take your biscuit cutter (or cookie cutter in my house) and begin to cut out biscuits as close together as possible, making sure you don’t twist your biscuit cutter when cutting them out. Just press down, and pull up for best results.
Place biscuits on baking sheet.
Place biscuits (on the middle rack) in preheated oven and bake for about 10 minutes or until tops are golden brown.
